This recipe entertains two of our favourite things: a splash of booze and cake, to create one seriously indulgent Southern delight.
When we first made this cake in our Product Development kitchen our bakers just couldn’t get enough of it. Slice by slice it disappeared and with just one taste you’ll know why!
This unassuming ring cake has the most absurdly buttery sponge which uses the acidic properties of buttermilk to interact with bicarbonate of soda to give a supremely moist and fluffy crumb.
But what really makes this buttermilk Bundt is the glaze, which is sticky, sweet and has just the right kick of Kentucky bourbon.
Soaked in nostalgia (and a little alcohol), this particular Bundt cake makes use of bourbon from the Bluegrass State to impart its buttery, smoky properties to the sugar glaze.
If you’re making it at home, any whiskey you fancy will do, but we are staying true to our American baking roots with bourbon.
Delicious with one of our barista coffees as a mid-morning treat, this cake might be the only sensible way to enjoy a splash of the hard stuff before happy hour! To get the taste of bourbon running through the sponge, we pierce the cake with a metal skewer and slowly pour over the sugar glaze while still hot and completely dissolved.
When cooled slightly, the glaze of caster sugar, butter and bourbon thickens slightly so that the sugar crystals leave a little crunch when the glaze is poured over the top. This gives the glaze-drenched cake a delicate sugar-frosted look with a very soft crunch when you cut through.
The result is a moreish melt-in-the-mouth buttermilk sponge reminiscent of pound cake soaked in a sweet, buttery bourbon glaze with hints of caramel and smoke. Believe us when we say that one slice of this baby just isn’t enough…
